So into bananas right now!

Banana Cupcakes (final recipe by Glory) 1 ½ cups mashed ripe banana  (it’s important these are nice and ripe, meaning nice and brown, speckled and ugly) 2 teaspoons lemon juice 3 cups all-purpose flour 1 ½ teaspoons baking soda 1/2 teaspoon baking powder 1/4 teaspoon salt 1 teaspoon nutmeg (freshly grated if possible) 1 teaspoon cinnamon ½ cup butter, slightly softened 1 1/2 cups sugar 3 eggs 2 teaspoons vanilla ½ cup nonfat plain yogurt  (make sure this is unsweetened, or you will have to reduce your other sugar) 1 cup milk (any fat content) *This can be made as a cake, cupcakes or both. It will make one 9” x 13” cake, or one 9” x 9” AND 12 cupcakes, or about 26 cupcakes. So, if you’re just doing cupcakes, line the cupcake pan with paper liners. If you are making it a cake, then grease and flour the pan. Preheat oven to 350 F. In a small bowl mix mashed banana with the lemon juice and set aside. In a medium bowl, mix flour, baking soda, baking powder, spices and salt; set aside. In a large bowl (the bowl of your electric mixer), cream butter and sugar until light and fluffy. Beat in eggs, one at a time, add yogurt, then stir in vanilla. Beat in flour mixture alternately with milk. Stir in banana mixture. * Option- this cake is good with any combination of chocolate chips or nuts. You could add 1 cup of mini chocolate chips into the batter (as pictured here), you could also add apx. 3/4 cup chopped walnuts. Another option is to bake the cake as is and add chocolate chips and/or nuts on top of the frosting.  Pour batter into prepared pan and bake in preheated oven. For cupcakes- bake apx. 18-19min. For 9 x 9 pan bake apx. 30-35 min. For 9 x 13 pan bake apx. 60 min (may need a little more) This cake is sweet enough to go without frosting (I guess then you could call it a muffin) but it’s extra good topped with Cream Cheese Frosting. (Here is the frosting recipe,flickr.com/photos/glorioustreats/3307082697/in/set-721576… ) Depending on if you put nuts or chocolate chips in the batter, you could also put some on top, your choice.
